It's the holiday countdown. You're wrapping presents, baking sweets and cooking course after course of your seasonal feast. Where do you get your energy while you work? If you're anything I was, you're thinking about dipping your spoon in to the cookie batter, or grabbing handfuls of chocolate chips straight out of the bag. Maybe you'll also devour a candy cane or two.
But I've got something WAY better for you this year. Take a few quick minutes to make these Raw Gingerbread Bites and keep them close at hand as you cook, clean and create your perfect holiday. The protein and healthy fats in the almond meal and hemp seeds keep you going (and your skin glowing), while the anti-inflammatory spices calm your skin and boost your digestion. Did I mention it's the next best thing to cookie dough, with no worries about raw eggs or sugar overload? You can even serve them to your holiday guests:)

Raw Gingerbread Bites
For extra anti-aging omega 3s, roll these sweet bites in raw shelled hemp seeds.
1 cup raw ground almonds/almond meal
1/8 tsp ground cloves
1/8 tsp ground nutmeg
1 tsp ground cinnamon
1 1/2 tsp ground ginger
scant 1/8 tsp black pepper
1/2 tsp sea salt or Himalayan pink salt
1 tbsp molasses
1/4 cup pitted dates (about 6 medium), roughly chopped
1 to 2 tsp unsweetened non-dairy milk
1 tbsp raw shelled hemp seeds (hemp hearts)
In a food processor, pulse almond meal, spices and salt until evenly mixed. Add molasses and dates, and process until combined. Transfer dough into a small bowl and add non-dairy milk as needed, one teaspoon at a time, as you use the back of a spoon to press the mixture together. When the dough clumps and comes away from the sides of the bowl, pinch off small pieces and roll into 1-inch balls. Coat some, or all, of your dough balls in raw hemp seeds.
