Dr. Oz recently shared a list of five fruits and vegetables that pack a major anti-aging punch. An easy way to boost your antioxidants and protect your entire body from signs of aging is to get this powerful produce into your diet today, and as often as possible:
1. Watercress. Rich in eye-protective lutein. It has a peppery taste, so mix it into your regular salad greens.
2. Apricots. Rich in potassium and beta-carotene, which can give skin a gorgeous glow from the inside out.
3. Cucumber. Definitely eat the cucumber skin, which is rich in silica, an essential component of connective tissue that can plump wrinkles and boost collagen production.
4. Blood Oranges. Rich in antioxidant anthocyanin and vitamin C.
5. Eggplant. The purple peel is loaded with antioxidants, including the anthocyanin nasunin, which protects brain cells.
Sounds like a salad in the making, right?...
Ingredients Watercress 1 apricot 1 cucumber 1 blood orange ½ eggplant Olive oil Garlic Black pepper Apple cider vineger
Directions Use watercress as your greens. Chop up one fresh apricot, one small cucumber, and add to water cress.
Cube 1/2 of an eggplant (add more if desired), drizzle with olive oil, garlic and black pepper. Roast in oven for 40-45 minutes at 400° F. Place on top of salad.
Dressing Juice one blood orange; mix juice with 2 teaspoons of olive oil and ¼ cup apple cider vinegar in a bowl. Toss over salad.
