quinoa

Yes, you've heard that quinoa is good for you (it's actually great for you,Β  as a gluten-free source of all 8 amino acids, easily digestible protein, plus iron, calcium and fiber).

What more could you ask for from a grain?

Actually...lots of us would ask for more recipe ideas. It can be easy to get stuck in a quinoa rut!

Enter Quinoa 365, a beautiful new cookbook packed with 170 delicious recipes that turn the everyday quinoa sitting in your pantry into everything from Pumpkin Pancakes to Roasted Red Pepper Tomato Soup! The book is a collaboration between Patricia Green and Carolyn Hemming, sisters who wanted easy, health-conscious recipes for themselves and their families.

The best part of Quinoa 365 is that it caters to vegetarians, vegans and meat-eaters alike, as well as savory and sweet palates. No matter how you eat or what you crave, Quinoa 365 has ample recipes to suit your tastes!

How will eating from Quinoa 365 boost your beauty? Protein is the core building material for new collagen and elastin (essential for youthful, wrinkle-free skin), and quinoa is a fantastic source of protein to add to your diet! Next time you chow down on quinoa, you'll be doing your skin a favor. And if you're looking to get more protein in your diet (vegans, vegetarians out there...), quinoa can be your go-to. Bonus: it's gluten-free and safe for many people with allergies.

Many of the recipes in Quinoa 365 use whole quinoa grains (actually called quinoa seeds), while others call for quinoa flour, which can be purchased or made by grinding raw quinoa in a food processor. A few others use quinoa flakes, which are a great alternative to oatmeal.

Here's a quick sampling of the quinoa recipes you'll get in the book: Quinoa Breakfast Burritos, Savory Stuffing, Quinoa, Leek and Corn Chowder, Quinoa-Crusted Chicken with Sage, Quinoa Veggie Bake, Quinoa Shortbread and Blueberry Sponge Cake. The book also includes a chapter on quinoa-based baby foods. Perfect for cooks who want health, baby- and family-friendly recipes in one place!

Healthy Carrot Spice Muffins

These satisfying and light muffins are super moist with a hint of sweetness.

Makes 12 muffins

1 1/3 cup (330 mL) quinoa flour 1 tsp (5 mL) baking powder 1/2 tsp (2 mL) baking soda 1/2 tsp (2 mL) salt 1 1/2 tsp (7 mL) ground cinnamon 2/3 cup (160 mL) raisins (or 1/3 cup raisins &1/3 cup chopped walnuts) 2 large eggs 2/3 cup (160 mL) brown sugar 2/3 cup (160 mL) plain yogurt 2 1/4 cup (560 mL) grated carrot

Preheat the oven to 350Β°F (180Β°C). Lightly spray with cooking oil a 12 cup muffin pan and set aside.

In a medium bowl, combine the flour, baking powder, baking soda, salt and ground cinnamon. Stir until well-blended. Mix in the raisins and walnuts (if using) and set aside.

In a large bowl, whisk together the eggs, brown sugar and plain yogurt. Stir in the grated carrot.

Using a spatula, gently stir the flour mixture into the carrot mixture until just blended. Scoop the batter evenly into the muffin cups. Bake for 20-24 minutes until an inserted toothpick comes out clean. Remove the muffins from the oven and allow them to cool completely before removing them from the pan. (I find a round toothpick comes in handy to run around the edges of the muffins before you remove them.)

Want the decadent version? Top these muffins with your favorite cream cheese frosting.
