Healthy Carrot Spice Muffins
These satisfying and light muffins are super moist with a hint of sweetness.
Makes 12 muffins
1 1/3 cup (330 mL) quinoa flour 1 tsp (5 mL) baking powder 1/2 tsp (2 mL) baking soda 1/2 tsp (2 mL) salt 1 1/2 tsp (7 mL) ground cinnamon 2/3 cup (160 mL) raisins (or 1/3 cup raisins &1/3 cup chopped walnuts) 2 large eggs 2/3 cup (160 mL) brown sugar 2/3 cup (160 mL) plain yogurt 2 1/4 cup (560 mL) grated carrot
Preheat the oven to 350°F (180°C). Lightly spray with cooking oil a 12 cup muffin pan and set aside.
In a medium bowl, combine the flour, baking powder, baking soda, salt and ground cinnamon. Stir until well-blended. Mix in the raisins and walnuts (if using) and set aside.
In a large bowl, whisk together the eggs, brown sugar and plain yogurt. Stir in the grated carrot.
Using a spatula, gently stir the flour mixture into the carrot mixture until just blended. Scoop the batter evenly into the muffin cups. Bake for 20-24 minutes until an inserted toothpick comes out clean. Remove the muffins from the oven and allow them to cool completely before removing them from the pan. (I find a round toothpick comes in handy to run around the edges of the muffins before you remove them.)
